Don't the chocolate scotcheroos shown above look oh so lovely? They look completely light and airy as they cascade downward... yeah, they fooled me too! I was hoping for soft and chewy and instead got break your teeth, hard ass bricks! I followed the instructions but i think that just may have been the problem...If you are curious over this one maybe use more peanut butter or less krispies...I don't know...I'm a scorned woman right now....
Aren't they lovely, how they just fell apart on the bottoms, ruining my hopes of a chocolate scotcheroo waterfallish photo shot!? "boo!", i say! The only positive I will give them is the chocolate frosting on the top was fairly yummy.

ReplyDeletehmmm...i bet that corn syrup is what made them that way. i would try to do it with a recipe for regular ol rice crispy treats and then add the peanut butter to it.

They think that your only problem is keeping them around? Apparently they have not actually made these, seems like they could stand to be around for a while. Poor dear, better luck next time!
ReplyDeleteI'm so sorry yours didn't turn out. My mom makes them all the time, so I double checked your recipe with hers. They are the same except she uses two bags of choc chips rather than one. I would try again. They are so yummy!

I was so excited to see Scotcheroos yesterday! We had them all the time in the dorm and omg I was in love. But, what's this, your recipe did not delight you in the amazingness that are Scotcheroos?! The shame! I must send you my recipe from the university residences cookbook (that I cheesily got upon graduation - yes it was a big ten school, and no, they did not give us anything else but a keychain to go with)
ReplyDeleteAnyway, I even scanned it for you as I always see you love to share, but upon loading realized the gosh damn recipie is almost identical to yours. What! Well... that just sucks.
(for your info the difference is melt the pb w/ the corn syrup and sugar, but don't boil it. Also the frosting added pb too, but I don't think any of this is going to help. Sigh...)
Mmmmm. Maybe the pan you used was the wrong size, and maybe you pressed the rice crispy mixture too firmly into the pan. Try again. These little things are so worth it!

ReplyDeleteI, however, am a lazy cook, and perhaps it has served me well as mine never turn out like bricks.
Put sugar, karo syrup AND peanut butter in all at once and heat over medium until well melted and sugar is dissolved.
When it BEGINS to bubble/boil, pull that baby off the heat or you are in for a world of bricks.
I also don't bother to "press" in the pan beyond what I can accomplish w/ my spatula.
Better luck next time. Believe me, they are worth a second try.
