Irish Potato Candy


 These mini potato candies actually contain no potatoes.  I found the recipe out in internetland and I believe them to be a modern confectionary.

1/4 cup butter soft
4 oz cream cheese
1 tsp coconut extract
4 cups powder sugar
2 1/2 cups shredded coconut
Powder cinnamon

Beat butter, cream cheese, and extract together till smooth.  Slowly add powdered sugar while mixing in-between.  Add coconut and blend.  Roll into mini potato shaped balls.  Roll in powdered cinnamon.  Chill and serve.

I found it helpful to chill the mixture after all the mixing and before rolling into balls.  
These things are sickly sweet and I couldn't handle eating more than 3 at a time. 
For some added fun you could put candy eyes on them turning them into wee Mr. Potato Heads!

Frito Kid St. Patrick's Party

I made little green pita bread rounds and tinted the chicken salad green, then topped it with a frito chip garnish.


Lemonade "frosted" with lime sherbet.  I used a melon baller to make mini sherbet scoops.  I am not sure if that is "frosted".


And of course mini pots of gold!  Fritos chips of gold!

Plan a Party St. Patty Plates


I picked up these vintage Hallmark party paper plates at an estate sale last summer.


 It was the first sale (of only 3) I have attended since the pandemic started.  It was being run by friends and I knew they weren't putting up with any malarkey when it came to mask enforcement so I felt fairly safe.

I certainly have no plans to ruin these plates with servings of cabbage and corned beef.  I was thinking they could be quick wall decor if I can bring myself to take them out of the wrapper.
